Roasted Red Pepper Dip This recipe is great with pita wedges or raw vegetable platters. It can also be used as a spread on sandwiches and wraps. Enjoy!!
Ingredients -2 cups of roasted red peppers -3 tbsp rice wine vinegar -1 tbsp honey -1/8 cup of honey mustard -1/2 tsp of salt -1/8 tsp of pepper -1 cup of vegetable oil
Method put the roasted red peppers, rice wine vinegar and honey mustard in a blender. Puree until smooth. Add the honey, salt and pepper, then slowly drizzle the vegetable oil. As you add the vegetable oil, you will see the mixture getting thicker. Once you have added all the oil, if the mixture is too thick for your liking, add a touch of water to thin it out.
Makes 3.5 cups
